I did some baking the other day.
A recipe has caught my eye and ignited my love for all things chocolate and cherry.
I found the recipe from an old magazine clipping but I tweaked it a little to make these delicious little bite sized treats.
Try them, you know you want to!
Chocolate Cherry Coconut Bites
150g butter or margarine, softened.
1/2 cup brown sugar
1 1/2 cups plain flour
1 tsp baking powder
3 cups desiccated coconut
395g can sweetened condensed milk
2 eggs, lightly beaten
200g red glace cherries, chopped
50g good quality chocolate, chopped
Preheat oven to 180*C
Grease a mini muffin tray.
Beat butter and sugar in a bowl. Sift flour and baking powder over and stir to combine.
Press teaspoon fulls of mixture into tray and bake for 5-10 mins or until light golden.
Combine coconut, eggs, condensed milk and cherries in a bowl and mix well. (Here is where I added a little red food colouring)
Spoon mixture over warm base and bake for a further 15-20mins or until light golden and firm to touch.
Allow to cool completely.
Melt chocolate and drizzle over top.
Refrigerate until set.
Perfect layering of soft biscuit and chewy cherry coconut....
