Baking With Peanut Butter

I had a sudden jolt of an idea pop into my head the other day...
While looking at my jar of peanut butter I thought to myself:
"Could I make my usual butter biscuits using peanut butter instead of butter? It would taste pretty good made into jam drops!"

Of course I have seen, and made, peanut butter biscuits before.
But with jam?
I'm sure they are out there somewhere.

Anyway, I tweaked the recipe, I mixed, I baked.

I used butter and peanut butter and they came out yummy. A bit more dense than the usual biscuits but with a nice subtle flavour.
I had some dough left over and decided to do a kitchen experiment.
One of our favourite slices in this house is a coconut jam slice.
The one with the biscuit base, layer of jam and then a crispy coconut top.
I thought it would be a nice change to use the peanut butter dough and got to work...

Look a bit funny for jam?
I ran out!
I had about a teaspoon of jam left so I mixed it with some fresh honey from my mum's bees.
Peanut butter and honey are a great combination!

So here you have it...

It was nice, a little dry, could do with a dollop of cream.

Orange Cake French Toast

Remember that orange cake I made not long ago?

Well, in case you don't believe me when I say that I don't eat much of the sweet stuff I bake....
I really don't, I promise!

Anyway, the cake was sitting in the fridge, it had started to lose it's freshness, and it begun to get stale.

I did a quick Google, as you do, to see what I could do with this stale cake.

My favourite answer... French Toast!

So here it is, in pretty pictures...

All you need is a few basic ingredients, and you too can rescue a sad , stale piece of cake.

The Lazy Housewife's Dinner

I have a confession...
Not every meal in our house is fantastic, prepared for hours, or planned well in advance.

I do meal plan weekly, but there are those days where you look at what you had planned for the day and think "Oh, I just can't be stuffed!"

So, instead of putting my feet up and letting my family starve, I open the pantry, fridge, pantry, fridge.
I'm tired.
I don't want to cook.
I want to drown my sorrows in a bucket of coffee.
I pull out a tin of tuna and instant mash potato mix from the pantry and shift over to the fridge.
I guess we should have some vegetables in there somewhere...
I grab a carrot, zucchini and some eggs.

I'm almost in a dream-like state as I grate, mix and fry up these tasty little patties.
I assemble them in a tortilla with a handful of lettuce, squeeze on some lemon juice and mayonnaise and VOILA! Dinner!

I am a good wife/mum after all!

(Though I am still tempted every day with the idea of putting my feet up and waiting to see if dinner will cook itself!)
