Remember these delicious pancakes?
Well finally I have written down the recipe for them!
Of course it did require another yummy pancake start to our day but of course there were no objections from anyone.
Raspberry Oat Choc Chip Pancakes
1 Cup Wholemeal Flour
1 tsp Baking Powder
3/4 Cup Oats
1/2 Cup Caster Sugar
1 tbsp Cornflour
1/2 Cup Flaxseed (Linseed) Meal
1 tsp Vanilla Essence
1/2 Cup Dark Choc Chips (Though I would like to try these with white chocolate instead-yum!)
1/2 Cup Raspberries (fresh or frozen and thawed)
- Place all ingredients except choc chips and raspberries in a bowl and whisk. It will be thick and gluggy but don't worry, it is supposed to be.
- Fold in the choc chips and raspberries.
- Pour large spoonfuls into a hot frypan and flip when bubbles start to appear.
- Serve by themselves, with melted butter, jam and cream or if you are feeling decadent with some vanilla ice cream.
Here's the nutritional information I calculated for you..... Not too bad! :)

Don't be fooled by these things, they are very filling!
I can get through one and maybe a half if I am super hungry.
