Wet Weather, Warm Scones.

It is miserable outside today.
Inside it is warm and the house smells like freshly baked scones.



The dishwasher hums.
The dryer spins.
All is quiet.
Kids asleep,
Parents enjoying their treats...

I Belong In The 50's...



Someday I feel like a real 50's housewife.
I cook,
I clean,
I wash,
I garden,
I feed, entertain and care for both of my gorgeous kids.
I love it.
Such a simple and happy life I have!
I love teaching my daughter how to cook and help and be creative.
I love showering both my kids with love and affection, and cherish the gurgling of my now 11 week old son.

Recently I had my birthday, and ten days later it was my brother's birthday. Him and his wife have come down for a visit and we both exchanged gifts over dinner...



My family (and my dear hubby) know me better than anyone else in this world! They bless me with lovely gifts which are just perfectly "me".

So I love to spoil them back with everything I can.



We gave 1/4 of this to my brother, his wife and my grandparents who they were staying with. It is so deliciously rich.

I also experimented with cookies and pretty icing. They look lovely and the icing is nicer than royal but they really aren't my thing. I love decorating them but not eating.



My garden is so lush! I am picking snow peas daily, and the herbs as I please. The fruit on the lemonade tree are slowly swelling up and the lettuce is crowded and overflowing!

But today will be a quiet day.
Both my boys are sick.
I am tired after caring for my little man overnight with his chesty cough and his sniffly nose.
If we could we would stay in all day, but we need to go food shopping, and possibly a visit to the doctor to get my little guy checked in case it is anything worse than just a common bug.
So off we go, tissues in hand!

Bread and Biscuits...


Well I cannot say how many biscuits are left from yesterday.... (Not many!)
But my baking adventures continued that day.
I dug around in our pantry and found an old packet bread mix I couldn't resist during a shopping adventure to IKEA.
I could have bought so many wonderful things...
But I opted for this:

Yes it was slightly challenging with no English instructions, I know I could have used trusty old Google but I thought I could try it using my baking knowledge.
It came out pretty yummy so I guess I must know a thing or two!

Baking in the morning.

This morning we have been biscuiting!
We started the day with some yummy breakfast, and a quick read of our new magazine....



Then onto the biscuits!
I decided now is the best time to take photos, because I fear after they are baked, they will not be around long enough to snap!

Too Much Deliciousness!

I have to admit I spend a fair amount of time on the Internet. When I am not feeding, playing, changing or soothing one of my two kiddies that is! But when I do get a chance to sit, to get lost in an online world, I sometimes stumble upon gems.

Many of the sites I find revolve around craft or cooking, but mainly cooking these days....

Delicious Dinners and Beautiful Brunches

My creative outlet seems to have switched over to cooking.
It is not easy seeing so many beautiful blogs, with so many beautiful craft projects I am dying to try.
But the hardest of all is choosing to cook the healthy meals over the incredible looking cakes, slices and cookies....

For breakfast the other morning I got creative.
My little man was back asleep and my tummy was rumbling in protest.
I dug deep in the fridge and pulled out a few things that made my mouth water....
Semi dried tomatoes,
Parmesan cheese,
Eggs,
Milk,
More cheese!
Add that to some bread, dried garlic and salt and pepper and....



This is the only photo I have. Why? It was so delicious that both the little girl and I scoffed most of it down the second the plate hit the table.
So what was it?
French toast with garlic, semi dried tomatoes and parmesan cheese.
It was amazing.
I made it again the following day to show my hubby how yum it was.

For dinner that night I decided to make a lasagne. I love lasagne but with vegetarian ones they can get a bit blah and just taste like tomatoes.
There was a packet mix kit at the supermarket we used to love which was a mushroom based sauce but it is no where to be found.
So I made one with delicious creamy ricotta, spinach and mushrooms.



To make dinner a bit healthier I made an experimental salad. The last experimental salad turned out so well my hubby could not stop eating it! And he is not a huge salad person.
So I pondered what flavours I like and it brought me back to Gazpacho!
You may have seen my recent post on Gazpacho Soup.
We loved the flavours so I decided to make a Gazpacho salad.
The same but minus some water and using a little less tomato paste.



Dessert..... Well I have a giant folder full of recipes I have collected over the years. Some I have never made but I saw one I could not resist.
Self Saucing Chocolate Pudding.



It looked good, it smelled good.... But the taste was less than spectacular.
I had doubts when I was mixing it up together.
So I hate to say, with our small servings taken out it is still sitting on the kitchen bench, waiting to be eaten.
I am so sorry puddin', you are doomed for the bin!
It's times like these I miss having chickens, they would have loved this treat!

Today I will be attempting to make some fudge....
Specifically this Caramel Hazelnut Fudge.
Though any of these fudge recipes look good too!
We do have enough ingredients to do two different kinds..... Or should I save the sweetened condensed milk for something else?
We have discussed the issue and decided upon....

This time I will make it in a shallower dish though! It was delicious but too rich for such big pieces.

Vege Garden Progress....



I took this photo just over a week ago.... Already I have pillaged the spinach twice and picked plenty of parsley and coriander for cooking.
The lettuce (front pot) has grown so fast and now my snow peas (back pot) have shot up with lots of teeny peas hanging off.

My lemonade tree has so many tiny fruit on it but it has been a haven for spiders and caterpillars!



Any non toxic child friendly remedies?

Happy Birthday To Me!




Today is my birthday.
I am 24.
So far I have:
Done washing,
Done dishwasher,
Cuddled my girl,
Cuddled my boy,
Not even seen my hubby yet (he leaves for work before I get out of bed),
Been inundated with messages on Facebook,
Blown bubbles with my girl while my boy slept,
Eaten left over Thai for lunch, forgetting how the spice intensifies overnight.

Yesterday was a big day for us. Mother's Day.
My in laws came over for lunch (the Thai-yum!) and then we took Eve for a quick run to the park followed by a big family dinner at my grandparent's place. It was so lovely to see my family, we eat and laugh together.

Plans for the rest of the day?
None.
Nothing at all.
Does it bother me?
Not really.
I do miss my friends and would love to see them, but it is not possible to do a 5hr drive for a quick visit!
I had planned on making a nice dinner for hubby & I but now I look in the fridge and see it full of leftovers so I can't waste them!

But it's ok, I have had fun playing with my wonderful birthday present from my hubby, my awesome new camera.

I turn around and my big girl is giving my little man cuddles...



Having a chat...



Let's blow bubbles!



Hmm... We have discovered LOTS of baby fish....



We will need to investigate ways of getting rid of them! Willing to give away to anyone and everyone, even pet shops!

So that is my birthday.
Nothing big.
Nothing fancy.
Just lots of love,

Gazpacho Soup!

I am a fan of the old TV show Red Dwarf.
I have fond memories of gathering in the lounge room with my family to watch an episode together. Many laughs were had. :)
From a certain episode (I won't go into detail, it won't make sense unless you have seen it) I have had an unwavering curiosity of Gazpacho soup....
I had to make it.
I had to eat it.
I.... Just....Had.....To!

In my favourite cookbook there is a recipe, so after years of looking but never quite doing, I finally made it.
Yes it may have taken me a lot longer than it should have, but in my defense I was running from children to kitchen all day.

Sadly I only managed one photo, this is it before adding the final stock....



It was delicious!
The only way I could describe it was like drinking a salad.
So tasty with the tang of vinegar, the crunchy cucumber and saltiness of the olives with a bite of garlic.

I think you should try it, why not?

Gazpacho Soup
Serves 4-6

Ingredients:

750g Ripe tomatoes
1 Lebanese cucumber, chopped (I used a large continental)
1 Green capsicum, chopped (I omitted as I didn't have any)
2-3 Cloves Garlic
1-2 Tablespoons finely chopped black olives (I didn't measure mine, just chucked a lot in!)
1/3 Cup Red or White Wine Vinegar (I used red)
1/4 Cup Olive Oil
1 Tablespoon Tomato Paste

Accompaniments: (I didn't bother with these but maybe next time if I have more time)
1 Onion, finely chopped
1 Red capsicum, finely chopped
2 Spring onions, finely chopped
1 Lebanese cucumber, finely chopped
2 Hard boiled eggs, chopped
Chopped fresh mint or parsley croutons

Directions:
  • To peel the tomatoes, score a cross in the base of each tomato. Cover with boiling water for 30 seconds then plunge in to cold water (I used a bowl in the sink with ice). Drain and peel away the skin from the cross.
  • Chop the flesh so finely it is almost a puree.
  • Mix together the tomato, cucumber, capsicum, garlic, olives, vinegar, oil and tomato paste and season to taste with salt and freshly ground black pepper.
  • Cover and refrigerate for 2-3 hours.
  • Use 2-3 cups of chilled water to thin your soup. (I added about 2 as I liked it strong)
  • Serve with accompaniments on the side.

On My Mind.....


I wish I could spend more time with my mum...
I miss her every day.
Mother's Day is sad when I don't see her.
My birthday is the following day this year.
All I want for my birthday is to see her.
Unfortunately that can't happen, she lives a long drive away and due to work/money we cannot go visit.
Hopefully soon we will!

My Baby Girl Turned 2!


Eve our first darling child, my beautiful little girl, had her 2nd birthday on the 24th April.
We celebrated with a big party with family, lots of food and lots of fun.

I spent most of the week cooking...
